Sure, I know it's technically not Fall yet (I have about 3 more weeks), but it's September so it's fall to me now! There are so many things I love about Fall and one of my favorite things is food. It's harvest time and I wanted to share a few of my favorite veggies and meals that are excellent for pregnancy.
Spaghetti Squash
I love Spaghetti Squash so much. It's an excellent replacement for pasta for those who are struggling with gluten during pregnancy. Also, it's a great way to obtain your dietary fiber as well as calcium. So set your oven to 400 degrees and let's get cooking. Cut your spaghetti squash in half (I personally like to get a big knife, put it in the butt end and slam the squash on the counter for leverage), then scoop out the innards. I normally rub a bit of avocado or olive oil on the half then put them inside down on a baking sheet. I bake for about 40 minutes. You can flip the squash and then see how tender it is. Enjoy with your favorite toppings like pesto and shrimp or meatballs and marinara sauce.
Brussels Sprouts
I know it sounds crazy but I love brussels sprouts. I mean, I usually make them with bacon and apples so that might be why. Why you should love them? They’re full of fiber, and they contain vitamin C, iron and vitamin B6. I start with the bacon. Cut your bacon into small pieces, break it apart and bake for 10 minutes at 400 degrees. While that's cooking, I cut the brussels sprouts in half. After the 10 minutes, I add the brussels sprouts to the bacon pan and coat in the bacon grease. Cause everything is better in bacon grease. Next cut your apples into small pieces. I personally love pink lady apples but choose your fave. After cooking the sprouts for 10 minutes, I will add the apples and coat in more bacon grease. Cook another 10 minutes and serve.
Sweet Potatoes
It's fall y'all so grab yourself some sweet potatoes. Sweet potatoes are a good source of vitamin C and vitamin B6. I love to eat these with sausage for breakfast. I add a bit of butter, cinnamon, and brown sugar. So delicious and filling. That also works well for snacks, lunches, and dinners. Two recipes I love are Chili Stuffed Sweet Potatoes and Beef and Butternut Squash Soup. I've found they also reheat well so these are great postpartum as well for quick lunches.
